At Ease, Ladies!

The Sarge is back after a brief beer-related hiatus! Today we review a fine chocolate stout which is supposedly ‘organic’. Now, based on previous reviews by fellow brothers of the Beer Brigade, I raise a mean eyebrow to anything boasting to be organic. This one just happened to get it right. Mazeltov…or something.

Now, these brewers claim the bold statment of being San Francisco Bay’s ‘Only Organic Brewer’. Jesus. Did the ‘organic’ craze just up and replace the void made by the Atkins Diet’s exit? I digress. On their website they also boast a few nice awards, so their flavor must have some merit. Captain Beer and I were bivouacking behind enemy lines when this sweet nectar of Bison was brought forth. I grabbed the chocolate stout without the bat of an eyeball and took a nice swig. The flavor is very complex.

Stouts are a myriad of flavor in general, and a chocolate stout is especially intriguing because it uses a sweeter chocolate malt to pump up the stout’s aroma. There’s always a chance that this can create ‘candy ale’. The sergeant disapproves of this. Bison got it right. Served very chilled, the brew hits the palate like ice, then the flavors seem to ‘bake’ in the mouth. It’s a very interesting combination of sweet chocolate, roasted malts and finishes with a woody flavor. It’s nice to know that ‘organic’ doesn’t always mean ‘O crap’.

  1. The Sarge is right… Bison has made a damn fine and dern approachable beer. Complex but not… snooty. This stout does just fine in 6 pack form. Ideally you have at least one friend to drink with, though. Not so much just for the beer but… for you… poor guy.
